We love this! Carrots, onions, rapini, cabbage and fresh herbs roasted and piled on a puree of garlicky tofu & parsnip (tofu, roasted garlic & parsnip, nutritional yeast, sea salt) and topped with pumpkin seed pesto (pepitas, olive oil, basil).

Note that a food processor, stick blender or small blender (ie bullet) is needed to make the puree. If you don't have one, the tofu can be sliced and pan seared and served as cutlets instead.
