We use flour, aquafaba and our own seasoned breadcrumbs for these delicious eggplant cutlets. Lightly pan-fried with very little oil, they are terrific on sandwiches and alongside salads, or build an eggplant parmesan casserole with our marinara sauce and house-made mozzarella.
